Dinner Time: Hearty Turkey Spaghetti

This is a quick and good for you weeknight or meal prep recipe as requested by my good friend Sehaam.  Let me know if you tried it! 😉

Ingredients
1-2 lbs lean ground turkey
1 box, 16 oz whole grain spaghetti pasta
1 cup chopped red bell pepper
1 cup chopped baby bella mushrooms
1 medium yellow onion, diced
1 carrot, finely shredded
1 sprig of fresh rosemary, roughly chopped. 1/2 tsp of dried rosemary will work also.
1 16 oz. can diced tomato
1 jar of favorite pasta sauce
salt and pepper to taste
Extra virgin olive oil to saute veggies
Directions
Boil pasta according to package directions. Drain and set aside.
In a medium saucepan add oil, red bell pepper, mushrooms. onion, and carrot over medium high heat. Saute until soft, 3-4 minutes. Add rosemary and continue to saute until rosemary becomes fragrant. Add diced tomatoes, salt and pepper and simmer for 2 minutes. Add pasta sauce, bring to boil, then reduce heat to low. Cook out the excess water and allow sauce to thicken, about 10-15, minutes stirring occasionally. Serve sauce immediately over pasta.
